Chocolate Granola {take two}

Happy 2016 guys.  I hope you have a very happy and cheery holiday. It was good here.   Spent some time with my lovely husband, spent time away from the Internet, took the kids to see the new Star Wars movie (so good) and ate wwwaaayyy too much food on Christmas. All in all, a very good bit of time off.


For my first recipe of the new year, we've got some granola today.  What do you think? Is granola healthy? Suppose it depends on how it's made and what's in it, right? 

The food blog land is filled with healthier recipes right now,so, here, I am, jumping on the bandwagon and saying this is healthy. That is not a certified, proven fact, but, it's not exactly not-healthy.  Oats, almonds, and coconut mixed with a little honey and syrup...yes, healthy.  Not to mention, delicious! The added chocolate is a great bonus.

A chocolate granola recipe was posted here on the blog back in 2012 and it was pretty tasty. This one is just as good, but, made differently. Same snack, different approach.  Hence, the whole snazzy "take two" in my title. :)

It's a great snack alone, sprinkled on yogurt or in a smoothie.

Chocolate Granola {take two}

Ingredients

  • 3 cups old fashion oats
  • 1/2 cup slivered almonds
  • 1/2 cup shredded coconut
  • 3/4 cup mini chocolate chips
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 2 egg whites
  • 1 tsp vanilla

Instructions

Preheat oven to 275 degrees. Lightly greats a large rimmed baking sheet.

In a large bowl, mix together oats, almonds and coconut. Set aside.

In a mixing bowl, whisk together honey, maple syrup, egg whites and vanilla until smooth.

Pour over oats mixture and coat evenly.

Spread oat mixture on top baking sheet. Be sure to spread it evenly on pan.

Bake for 30 minutes, then, stir. Making sure it is still spread evenly on pan. Then, return to oven and bake an additional 30 minutes or until browned and crunchy.

Remove from oven and toss with mini chocolate chips.

Keep leftovers in covered container.
