Doggie Cupcakes

Our little puppy, Hope, turned 6 months old a few weeks ago. It's hard to believe that when we adopted her, she was just 9 weeks old. Time sure has flown by.

This is her,back in the fall. Don't let the sweet puppy-dog face fool you. Trouble is her middle name.

She is my official "assistant" when, taking photos. Along, with of course, my youngest son. They make quite a team. Lots of fun with these two,but, whew..some days! They have sooo much energy. So much. So.Much. Guys, they just wear me out.  Good thing I love them :)


To celebrate her and all my lovable doggies, the kids and I decided to make doggie cupcakes or "pup cakes".  A dog friendly dessert made with whole wheat flour and applesauce. It's also topped off with some frosting made with pumpkin and yogurt. Nice and doggie friendly.

Not a surprise, they were an instant hit with all of my doggies. Hope could not contain herself. Typical puppy craziness:



The other two dogs were a bit more behaved. Trixie, waited so patiently. Such polar opposite of the the puppy:



They were lots of fun and a great treat for our furry friends.

{side note: you may want to adjust the portion size to the size of your dog. My bigger dogs could eat a whole cupcake, but, the puppy (aside from the one she grabbed from the photo table), was only served half at each time. Use your own judgment when serving}

Homemade Doggie Cupcakes
Prep Time: 10 minutes
Baking Time: 30 minutes
Makes: 6-8 cakes

Ingredients:
  • for cupcakes:
  • 1/2 cup wheat flour
  • 1 tsp baking powder
  • 1/3 cup canola oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain Greek yogurt
  • 1 TBSP honey
  • 2 TBSP creamy peanut butter
  • for frosting:
  • 2 oz cream cheese, softened
  • 4 TBSP pureed pumpkin
  • 2 TBSP plain Greek yogurt
  • 2 TBSP flour 
Directions:
  1. Preheat oven to 350 degrees. Grease a 6 count muffin pan or line with liners
  2. In a mixing bowl, combine all ingredients for cakes until smooth.
  3. Spoon evenly into muffin pan.
  4. Bake for 30 minutes or until knife inserted comes out clean.
  5. for frosting:
  6. Mix ingredients until smooth. Frost on cooled cakes.
