Chocolate Chip Scones

Light, fluffy scones that are loaded with mini chocolate chips!

We have officially started summer at our house. My husband finished his school year and is officially off work until August. He usually takes a part time job teaching college in the summer, but, this year, he's taking the time off.  Which is awesome, because, I'm hoping to get the kitchen painted this summer.

Oh, I'm just kidding! Well, kinda. The kitchen does need to get painted, but, he (and me!) definitely are going to use the time to kick back a little this summer and just relax.  Just typing that makes me happy.

Speaking of relaxing, you should too.

How about you make some scones first? Grab a cup of tea or coffee, your scone, a good book and then, kick back and relax.  Sounds good, doesn't it?

Putting all my dorkiness aside, I do have some fabulous scones for you today.

Chocolate chip scones to be exact.  These are light, fluffy and are melt-in-your-mouth yummy. Perfect for breakfast, dessert or of course, anytime you want to sit back and relax with a snack.

Chocolate chips make everything better and these scones are no exception. Bake up a batch soon!



Chocolate Chip Scones

Ingredients (8 scones)
  • 2 cups flour
  • 2 TBSP sugar
  • 1 TBSP baking powder
  • 1/2 tsp salt
  • 6 TBSP butter
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup mini chocolate chips
FOR TOPPING
  • 1 TBSP milk
  • sprinkling of coarse sugar
Instructions
Preheat oven to 425 degrees. Grease a flat baking sheet.
In a mixing bowl, mix together flour, sugar, baking powder and salt. Add in butter and mix until dough is pea-like.
Then, add in egg and milk and mix until just combined. Don't over mix!
On a well floured surface, shape dough into a circular shape. Cut dough into 8 wedges.
Place wedges on greased baking sheet. Brush each wedge with milk, then, sprinkle with coarse sugar.
Bake for 10-12 minutes.
