Salted Pretzel Marshmallow Bars

A sweet and salty bar topped with toasted marshmallows, and drizzled with chocolate and peanut butter.  You will not be able to eat just one!
Since the majority of my posts are of the dessert variety, many of them get taste-tested here at home, then, the rest of the item head to my husband's work.

Not because we don't like them here, it's quite the opposite.  We like them. We love them. We could probably eat desserts constantly here, but, that isn't necessarily the healthiest of options.  So, I like to share them.


After taking one bite of these bars, I knew..they could not stay in my house.  They were going to be hard to resist.  I let my husband know that he had desserts to bring in the next day.  Well, they never made it.  Sorry, nice people at my husband's work.  
Oh, I didn't eat them all myself. We, my family, as a collective whole, kinda inhaled them. 

My friends, these are..fabulous.  No kidding here.  They are so very good. Here's what we have:

The base of the bar is kinda chewy, with a sweet and salty taste combination going on. Filled with pretzels and lots of brown sugar. 

Top with more pretzels.

Then, you top them with giant marshmallows.  Roast them.

Drizzle with chocolate.  Then, peanut butter.

Gah.  Fabulous. 

You must make these immediately.

Salted Pretzel Marshmallow Bars
Prep Time: 20 minutes
Baking Time: 30 minutes
Serves: 8-12

Ingredients:
  • for bars:
  • 2 cups salted pretzels, divided
  • 1 1/4 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 cup (1 stick) butter, melted, then, cooled
  • 1 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • for topping:
  • 8 large marshmallows, cut in half
  • 1/4 cup peanut butter baking chips
  • 1/4 chocolate chips
  • 1 tsp canola oil, divided.
Directions:
  1. for bars:
  2. Preheat oven to 350 degrees. Line a 9 x 13 baking dish with foil, leaving an edge overhang. Grease foil.
  3. In your blender or food processor, mix pretzels until they are finely grounded. This should give you approx 1/2-3/4 cup pretzel crumbs.
  4. In a bowl, add in pretzel crumbs, flour, and baking powder. Set aside.
  5. In mixing bowl, mix melted butter and brown sugar.  Then, add in eggs and vanilla. Add in flour mixture and mix until combined.
  6. Spread batter on the bottom of the prepared baking dish. Sprinkle remaining 1 cup of broken pretzel pieces on top. Bake for 25-30 minutes or until knife inserted comes out clean, except for a few crumbs.Remove from oven and let cool completely. Remove bars from baking dish, leaving them still on foil and place on a baking sheet.
  7. for topping:
  8. Preheat broiler.  Press cut marshmallows halves (sticky side down) into bars. Place under broiler only until marshmallows get browned.  Only a minute or two!
  9. In separate bowls, melt peanut butter and chocolate chips with 1/2 tsp of oil each until smooth. Drizzle each on bars.
  10. Let bars cool completely before cutting
