Salted Pretzel Marshmallow Bars

A sweet and salty bar topped with toasted marshmallows, and drizzled with chocolate and peanut butter.  You will not be able to eat just one!
Since the majority of my posts are of the dessert variety, many of them get taste-tested here at home, then, the rest of the item head to my husband's work.

Not because we don't like them here, it's quite the opposite.  We like them. We love them. We could probably eat desserts constantly here, but, that isn't necessarily the healthiest of options.  So, I like to share them.


After taking one bite of these bars, I knew..they could not stay in my house.  They were going to be hard to resist.  I let my husband know that he had desserts to bring in the next day.  Well, they never made it.  Sorry, nice people at my husband's work. Oh, I didn't eat them all myself. We, my family, as a collective whole, kinda inhaled them. 

My friends, these are..fabulous.  No kidding here.  They are so very good. Here's what we have:

The base of the bar is kinda chewy, with a sweet and salty taste combination going on. Filled with pretzels and lots of brown sugar. 

Top with more pretzels.

Then, you top them with giant marshmallows.  Roast them.

Drizzle with chocolate.  Then, peanut butter.

Gah.  Fabulous. 

You must make these immediately.

Salted Pretzel Marshmallow Bars

Ingredients (Serves 8-12)
    FOR BARS
    • 2 cups salted pretzels, divided
    • 1 1/4 cup flour
    • 1 1/2 tsp baking powder
    • 1/2 cup (1 stick) butter, melted, then, cooled
    • 1 1/2 cup brown sugar
    • 2 eggs
    • 1 tsp vanilla
    FOR TOPPING
    • 8 large marshmallows, cut in half
    • 1/4 cup peanut butter baking chips
    • 1/4 chocolate chips
    • 1 tsp canola oil, divided.
    Instructions
    FOR BARS
    Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
    Crush 1 cup of pretzels until food processor until fine. You should have about 1/2 cup of crumbs.
    Whisk pretzels crumbs together with flour, baking powder. Set aside.
    In a saucepan over medium heat, melt butter. Remove from heat and mix in brown sugar until fully combined. Let it cool for about 5 minutes.
    Beat brown sugar mixture, eggs and vanilla until combined. Gradually, add in flour mixture and mix until combined.
    Spread batter evenly into pan.
    Break up remaining 1 1/2 cups of pretzels and sprinkle on top of base.
    Bake 25-30 minutes or until toothpick inserted comes out clean.
    FOR TOPPING
    Preheat broiler.
    Press marshmallow halves, sticky side down on top of base. Distribute evenly.
    Broil for just 1-2 minutes or until marshmallows are golden. Let them cool.
    Melt peanut butter chips with 1/2 tsp canola oil. Repeat with chocolate chips with remaining 1/2 tsp canola oil in separate bowl.
    Drizzle both over toasted marshmallows.
    Let chocolate set before cutting bars.
