Double Chocolate Cupcakes with Marshmallow Cream Cheese Frosting

For real though..I've been food blogging since 2011 and it still stumps me when recipes like this come up. Hence, my dorky intro. 

I mean, they are cupcakes. Double chocolate cupcakes with marshmallow frosting. What else is there to say except that they are amazingly delicious you would be crazy not to make them immediately? I think that would pretty much cover it. So, what are you waiting for?!

Double Chocolate Cupcakes with Marshmallow Cream Cheese Frosting

Ingredients

  • FOR CUPCAKES:
  • 1 cup flour
  • 1/3 cup butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1/3 cup unsweetened coco powder
  • 1/2 cup plain Greek yogurt ( or sour cream )
  • 3/4 tsp baking soda
  • 1/2 cup chocolate chips, plus additional for sprinkling
  • FOR FROSTING:
  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 7 oz marshmallow fluff
  • 2 tsp vanilla
  • 2 1/2 cups powdered sugar

Instructions

  1. FOR CUPCAKES:
  2. Preheat oven to 350 degrees. Grease a 12 count muffin pan or line with cupcake liners
  3. In a bowl, whisk together flour, cocoa powder and salt. Set aside.
  4. In another small bowl, mix together yogurt and baking soda. Set aside.
  5. In a mixing bowl, beat butter and sugar until fluffy. Add in eggs, one at a time.
  6. Add flour mixture and yogurt mixture in gradually. Alternate between the two. Starting and ending with flour mixture.
  7. Mix until just combined. Then, fold in chocolate chips.
  8. Scoop into prepared muffin pan. Filling approx 2/3 full.
  9. Bake for 15-18 minutes or until toothpick inserted comes out clean.
  10. Let cupcakes cool completely before frosting.
  11. FOR FROSTING:
  12. Beat cream cheese, butter, marshmallow fluff and vanilla until combined. Gradually, add in powdered sugar and beat until fully blended and fluffy.
  13. Frost on cooled cupcakes. If desired, sprinkle tops with chocolate chips before serving.

Yield: 12 cupcakes

Prep Time: 00 hrs. 30 mins.

Cook time: 00 hrs. 18 mins.

Total time: 48 mins.
