A double chocolate delight..
Fudgy chocolate bundt cake packed with mini chocolate chips and drizzled with a sweet glaze.
Sadly though, we lost my Mom a few weeks ago. She just turned 80 years old this past June and was doing awesome. Yes, the past year her health has been a bit of roller coaster. But, she was handling like a champ. Living on her own and taking great care of herself. So, her loss was quite unexpected. But, she passed away surrounded by family and went very peacefully.
If you have read my blog, for even a short time, you know, I've mentioned my mom around here alot. She was an extreme foodie. As soon as you got up in the morning, she was asking you what you wanted for dinner. She also baked everyday of my childhood. I would get home from school and find cookies, brownies, cake..you name it. She loved to be in the kitchen.
She also was one of my biggest cheerleaders when it came to this blog. She didn't own a computer or have the Internet, but, she always asked what was being shared and what was coming up. Always giving me a "that's wonderful honey!" every time something exciting happened around here.
So, in my mom's honor today, I baked you guys a cake. A chocolate cake that my mom made me for years. A simple cake that will always make me smile or cry, every time it is made. Just because, it reminds me so much of my childhood with my parents. Two people who are missed more than I can put into words.
It's funny though, way back when, I assumed this was a really complex cake to make. Then, my mom gave the recipe a few years back and it was realized, it wasn't complex at all. If fact, it's pretty darn easy. Darn easy with a huge flavor impact.
Double chocolate flavor with lots of chocolate chips to add to it. The sour cream gives it a great, creamy flavor and the powdered sugar glaze is sweet enough to add a little bit more to it,without taking anything away from the chocolate. It is beyond amazing, my friends!
So, if you can, hug your mom (and dad!) today and have some cake.

Double Chocolate Sour Cream Bundt Cake

Ingredients (Serves: 8)
- 1 box, chocolate cake mix
- 2/3 cup water
- 1 cup sour cream ( or plain Greek yogurt)
- 3 eggs
- 1 cup mini chocolate chips
- 1 cup powdered sugar
- 2-3 TBSP milk
Preheat oven to 350 degrees. Grease and flour a bundt pan very well.
In a mixing bowl, beat together cake mix, water, sour cream and eggs until fully combined.
Fold in mini chocolate chips.
Pour into prepared pan and bake for 40-45 minutes or until toothpick inserted comes out clean.
Let cake sit in pan before removing.FOR GLAZE
Stir together glaze ingredients until smooth. Add/subtract milk to reach desired consistency. Drizzle on cooled cake.
