We are in full blown summer heat in my neck of the woods. Up until now, the weather has been rainy, really rainy, but, the heat and humidity have been pretty bearable.  Not anymore. Goodbye comfortable weather. 

Guys, you know I dislike any temperature over 82 degrees immensely.  Add that in with the humidity? Even more. It's just not fun.

My least favorite thing to do is this weather is cook.  I always enjoy being in the kitchen and creating, but, this time of year?  The oven stays off.

When it gets like this, I love to pick a Ready to Serve Chicken Meal from my local Jewel-Osco grocery store. You can find them in the "Chef's Kitchen" ( the deli) area of the store. 

With the meal you get a fully cooked, hot and ready, rotisserie chicken, two sides, 4 rolls and a 64 oz container of Gold Peak Ice Tea.  It gives you everything. Dinner is done!

Now, I have to be honest, my favorite thing about this meal (besides me not cooking in the blazing heat) is the ice tea.  I love ice tea.  Adore it.  I kid you not, I drink gallons of it all year round. 

It goes perfectly with the ready meal and, if you like, you can also get a 1.25 liter of Cocoa-Cola™ too! My store keeps the beverages in a separate aisle, but, in some stores, you can find your Cocoa-Cola™ or Gold Peak® Ice Tea right at the Chef's Kitchen area.  Just inquire with the department when you  order your meal. 

Right below is a photo of our complete meal. 

Just a side note: we usually get two separate sides, however, we opted to get two orders of potato wedges, due to what our store had available.  Check with your local store for your specific side options.

The other nice option of the rotisserie chicken is the versatility of it.  If you chose not to eat it as it comes in the meal, turning it into another meal is always easy.

A great option is this fabulous chicken salad.  I still don't heat my oven. I already have made sides. The rolls also double as bread for the sandwiches.   

Making this chicken salad is a no-brainer..

First, with two forks, or just dive right in with your hands, remove the chicken from the rotisserie chicken.  Just be careful if you use your hands..the chicken is heated and may be hot! 

Then, simply mix the shredded chicken with mayo, honey mustard, celery, chives, and salt/pepper in mixing bowl.  After getting it good and combined, cover it, and refrigerate to get it cold. Your mixture will be cold and flavors mixed after about an hour.  However, feel free to refrigerate until your needs are satisfied. Even overnight, if desired.  Serve it up on the ready meal rolls or on your bread of choice.

A delicious, easy meal served to the whole family. Less work for you and more time to spend with your family at dinner!

Ingredients (Serves: 6)
  • 2 cups cooked chicken, shredded or diced
  • 1 cup mayo - homemade or store bought
  • 3 TBSP honey mustard
  • 1 celery rib, diced
  • 1 TBSP dried chives
  • salt/pepper, to taste preference
Instructions
In mixing bowl, mix all ingredients until combined well. Cover and refrigerate for at least 30 minutes before serving.
