Whew..TGIF! It's been quite a week here. 

I mentioned previously, two of my kids are headed back to public school.  Both are doing part time school, then, part time homeschooling.  It's working out really well, but, it's been quite a change to our schedule.  Just getting back into the swing of things has been a little tough.  

Pretty normal stuff, right?  Is school back in session where you are? How's it working out? 

Dinners like this one are at least making getting people fed easier.

One of our favorite quick dishes here on the blog is Bubble Up Lasagna. Really easy. Really yummy.
This is pretty similar, except instead of red sauce, we are using Alfredo sauce and we also added chicken.

This dish only takes about 10 minutes to throw together and 35-40 minutes to bake.  Dinner will be ready in about an hour.  Super quick!  Also, if you want to add your veggie right into the dish, toss in 1-2 cups of baby spinach with the cooked chicken and continue with the regular baking time.

It's a great use for a rotisserie chicken or any leftover cooked chicken in your fridge. Our favorite jarred Alfredo is Bertolli, but, homemade will work great too.

Ingredients (Serves: 6)
  • 2 cups cooked chicken, chopped or shredded
  • 2 cups shredded mozzarella cheese, divided
  • 15 oz Alfredo sauce
  • 16 oz package of flaky large biscuits
Instructions
Preheat oven to 350 degrees.
Grease a 9 x 13 baking dish.
Remove biscuits from package and cut each biscuit into 6 pieces. Place biscuit pieces into large bowl.
Add Alfredo sauce, 1 cup of cheese and cooked chicken into bowl with cut biscuits. Mix well to combine.
Spread mixture evenly into greased pan.
Top with remaining mozzarella cheese.
Bake 35 minutes or until biscuits are brown and cooked through.
Let it sit for 5-8 minutes before serving.
If desired, top with fresh or dried parsley before serving.



Homemade Alfredo Sauce

Prep Time: 00:15
Cook Time: 00:30
Ingredients (Serves: 6)
  • 1/4 cup butter
  • 1 cup heavy cream
  • 1-1/4 cup grated or shredded Parmesan cheese
  • approx 1/4 cup parsley, if desired
  • garlic powder, to taste preference
Instructions
Melt butter in a saucepan over medium heat. Add cream. Simmer for approx 5 minutes.
Whisk in cheese and garlic powder. Heat thoroughly. Stir parsley.
{if your sauce is too thick, thin out with pasta water gradually}
