It's been a craazzyy week here, guys.

So crazy. The weekend can not get here quick enough this week.

I've written this post about a million times and never been able to finish it.  I sit down at the computer, type a few words and then have to stop because of some reason or another.  School stuff, family stuff, nutty children arguing, the dog..anything! It's just been nuts.


Oh heck, let's not worry about all that anymore, because, today, we have whoopie pies!

The only other whoopie pie recipe here on the blog is for a pretty basic chocolate pie with marshmallow filling.  Really delicious, but, today, we are adding to the collection with something different.

Our pie is a vanilla base, but, it's loaded with Oreo cookies. Yum! Then, we are filling it with a creamy, decadent chocolate filling.  It's really chocolaty and fabulous, so, try not to eat it all before filling your whoopie pies.  ðŸ˜‰

For the filling...when you make it, it will be warm and soft.  Not too easy to work with and a bit messy. So, let it sit to cool before spreading in on the whoopie pies. The colder the filling is, the easier it is to work with.

These are really fabulous and make such a fun dessert.  A great alternative to cookies or cupcakes or even your traditional pie.

Ingredients (approx 8-10 pies)
    FOR WHOOPIE PIES
    • 2 cups flour
    • 1 1/2 tsp baking powder
    • 1/2 tsp salt
    • 2 eggs
    • 1/2 cup (1 stick) butter, softened
    • 3/4 cup plain Greek yogurt ( or sour cream)
    • 1 cup brown sugar
    • 1 tsp vanilla
    • 1 cup crushed Oreo cookies ( or store brand equivalent)
    FOR CHOCOLATE FILLING
    • 1 cup whipping cream
    • 10 oz chocolate chips
    • 2 TBSP butter
    • 1 tsp vanilla
    Instructions
    FOR WHOOPIE PIES
    Preheat oven to 350 degrees.
    Lightly grease a flat rimmed cookie sheet or line with parchment/slip mats.
    In a bowl, whisk together flour, baking powder and salt. Set aside.
    In a mixing bowl, beat together butter and sugar until creamy. Then, add in eggs, vanilla and Greek yogurt. Beat until combined.
    Gradually, add in flour mixture and mix until fully combined, but, over mix.
    Fold in crushed cookies.
    Drop approx 1/4 cup of batter onto cookie sheet. Space the batter about 2 inches apart.
    Bake for 7-10 minutes. Let pies cool for 5 minutes before removing from cookie sheet. Then, cool them completely before adding filling.
    FOR CHOCOLATE FILLING
    In a bowl, add chocolate chips and butter.
    In a saucepan over medium heat, heat whipping cream until it boils slightly.
    Remove from heat and add to a chocolate chips and butter. Stir carefully until mixture is completely melted and smooth. Stir in vanilla.
    Let chocolate cool to firm. This should take about an hour at room temperature or place in fridge for 30 minutes or so. The colder the filling is, the easier it will be to work with. So, don't use it when it too warm, it can be messy.
    Spread cooled filling on bottom of one pie, then, top with a second. Repeat until all are filled.
