Don't you just love the fall weather? Leaves changing, cozy sweaters and best of all, no sticky, humid heat of summer!

My kids are same as me, they are in love with the fall season.  For them, it's all about playing in leaf piles, apple picking and going to our local pumpkin patch.

They also love their snacks.
Honestly, two of their favorite things to eat are pizza and pancakes.  So, what better combination for a fun snack?

These are so simple to make, the kids can do all the work!

First, start with Kellogg® Eggo® Star Wars Galaxy Adventure Pancakes. You can find them at your local Walmart in their frozen breakfast food aisle. Also, great news!  Eggo waffles and pancakes now have no artificial flavors and colors from natural sources.

Next, just, spread on your favorite pizza sauce, cheese and toppings and bake. That's it...simplicity at its best. 

Friends, pancakes are not just for breakfast. Trust me!

Ingredients
Instructions
Preheat oven to 375 degrees.
Lightly spray a flat rimmed baking sheet with non stick cooking spray.
Remove pancakes from package and let them sit at room temperature for 5-10 minutes.
Spread tops of pancakes with sauce, then, top with mozzarella cheese and any additional desired toppings.
Bake for 8-10 minutes or until cheese is melted.
