Something pretty major was accomplished today. 

I finished my Christmas shopping. Well, sorta.

All the kids gifts are ordered. Yes, ordered. I went with complete online shopping this year.  I've done a bit in the past, but, this year, everything was done online.  Amazon Prime is my new best friend.

Speaking of Christmas...you should totally make these pancakes for your Christmas breakfast. πŸŽ„
As you can probably tell from the pictures, these are probably best served as "special occasion" breakfast.  Of course, you don't have to save them.  It's up to you.

We start with a basic pancake recipe, but, add some hot cocoa mix to it.  Now, be sure your hot cocoa mix is sweetened, because, there is no additional sugar in these.  The cocoa mix sweetens them up just fine. You can also go with this homemade version of hot cocoa mix, if you prefer.

For ours, I topped them with chocolate syrup, whipped cream and sprinkles ( 😍😍😍), but, mini marshmallows are also a great topping idea.   Also, if you want to cut back on the all the decadence, you can also just have these plain. They are just as good without all the additions, as they are with them.

Hot Cocoa Pancakes

Ingredients (10- 5 inch pancakes)
  • 1 1/4 cups flour
  • 1/3 cup dry hot cocoa mix (sweetened) store bought or homemade
  • 1 TBSP baking powder
  • 1/4 tsp salt
  • 1 egg
  • 2 TBSP canola oil
  • 1 cup milk
  • chocolate syrup, store bought or homemade, for topping
  • whipped cream, store bought or homemade, for topping
  • chocolate sprinkles, for topping
Instructions
In a mixing bowl, whisk together flour, cocoa mix, salt and baking powder.
Then, stir in egg, oil and milk and mix to combine. Don't over mix.
Lightly oil griddle or frying pan over medium low heat.
Scoop approx 1/4 cup of batter onto griddle/pan. Cook until bubbles form and flip over. Cook another 2 minutes. Repeat until batter is gone.
If desired, garnish with chocolate syrup, chocolate sprinkles and whipped cream before serving.
