Hi! I'm Erin.
Welcome to my little space on the Internet, otherwise known as Table for Seven.


The cute guy in the photo with me is my husband of 13 years, "Mr Plain". The man will not eat ketchup, mustard, mayo, salsa, BBQ sauce or basically anything resembling a condiment or spice.  He does however love a good cheeseburger (plain!), Chicago pizza, Star Trek, soccer,mathematics and has a borderline obsession with the state of Alaska.  He also is my biggest supporter and best friend.

These are five of my kids...they're cute, aren't they?

This is Eliza...our youngest. She was born June 2012. We lost her in July 2012. She was just 31 days old.
Me? Here are some random, possibly, interesting tidbits about myself:
  • grew up in the South suburbs of Chicago in a family of 5 kids.
  • love tacos, chocolate, doughnuts and stuffed pizza
  • my favorite part of blogging is taking the photos. I am also obsessed with taking pictures of my kids,  I think they are getting a bit sick of it actually :)
  • my 10 year old daughter has autism and my youngest daughter that we lost had Down Syndrome, so special needs is something very close to my heart.
  • it's possible that I have watched nearly every episode of the Law and Order TV franchise.
  • I really dislike reality shows and vegetables.
  • Between my family and Mr Plains, I have 19 brother/sisters in laws and about 30 nieces and nephews, holidays can be a bit chaotic.
  • Mr Plain has 3 college degrees and is starting his 4th in the fall.  I only graduated high school and barely made it through 3 months of community college.  Mr Plain is a math teacher and I  barely passed high school basic Algebra with a D+.  No, we did not meet in school :) Actually, our sisters were best friends for 9 years before we met each other briefly.  It was another 2 years after that when we started dating. 4 months after that..we were engaged.

Table for Seven started in 2011.  We were a very box-eating-processed-toss a frozen pizza in the oven kinda family.  That changed when my oldest son's eating habits didn't.  His diet consisted on maybe 10 items and he was not budging in trying anything new.  I dove into making everything on his small list homemade and healthier. This steamrolled into expanding my cooking and baking skills (which were non-existent).  I have come along way since then, but, believe me, a frozen pizza or boxed mac n cheese still makes it way to our dinner table on occasion.  Some weeks more than others.
Table for Seven is all about these cooking and baking experiences. The good and the not so good.  I am not a professional baker, cook or photographer..but, I am honest and only share what we prepare here at home and don't worry, they will not cost you a small fortune to make.
