As previously shared, I don't really do diets.  It's not the diet's fault.  It's mine. I just really stink at them.

However, I do believe in portion control and cutting back on a few calories, here and there. A few years ago,  I gave Weight Watchers a try and worked pretty well.  But, for some reason, since then, when I've tried the program again, sticking with it has been an issue.

While I would like to try the program again in the future, I did discover this amazing cake back in the day and still make it quite regularly.

All you need for this cake is:
  • dry cake mix ( any flavor)
  • diet soda ( again, any flavor)
  • egg whites.
Perfectly simple.

Simply mix your dry cake mix with the diet soda and eggs and pour batter into your desired pan.  I've used a bundt pan, a 13 x 9 pan, and as seen in these pictures, made a layer cake with the batter. They all worked perfectly.

As for the frosting, you can have a plain cake (still fabulous), frost with a lite whipped cream (ex: TruWhip/Cool Whip) or make your own whipped cream and go sugarless with it.

Ingredients (Serves: 8-10)
  • 1 dry box cake mix- any flavor
  • 10 oz diet soda- any flavor
  • 3 egg whites
Instructions
Preheat your oven to whatever is listed on your cake mix.
Make sure you spray your pan with cooking spray. (You can use 13 x 9, make cupcakes or I even made a bundt cake with this recipe)
Mix dry cake mix, diet soda and egg whites and pour into pan.
Bake according to your cake mix directions on the package.


Chocolate Buttercream Frosting- NO Powdered Sugar Required

Ingredients
  • 1/2 cup (1 stick) butter, softened
  • 1/3 cup honey
  • 1/4 cup cocoa powder
  • 1 tsp vanilla
Instructions
Combine all ingredients in a mixing bowl. Beat until smooth. Let frosting sit in fridge for 15 minutes or so to set. Keep leftovers in a covered container in refrigerator.
