There are so many recipes here at Table for Seven that come from my childhood. These bars are one of them.

Scotcheroos? I am guessing the ‘scotch’ comes from butterscotch chips. The ‘roos’? I’m stumped. 🤔

These are cripsy rice bars made with gooey peanut butter and corn syrup. Then, they are topped off with a combination of melted chocolate and butterscotch chips. Yum overload.

Ingredients Needed:

  • Crispy rice cereal ( ex: Rice Krispies or brand equivalent)
  • Light corn syrup
  • Sugar
  • Peanut butter
  • Chocolate chips
  • Butterscotch chips

Recipe Notes:

  • If you aren’t able to find butterscotch baking chips, you can substitute with peanut butter baking chips.
  • When cutting, spray a sharp knife with non stick cooking spray for easier cutting.
  • Be sure to store leftovers in the refrigerator.

Prep Time 30 minutes
Additional Time 1 hour
Total Time 1 hour 30 minutes

Ingredients

  • 1 cup white sugar
  • 1 cup light corn syrup
  • 1 cup peanut butter
  • 5 cups crispy rice cereal 
  • 6 oz chocolate chips
  • 6 oz butterscotch chips

Instructions

  1. Line a 9 x 13 baking dish with foil. Spray foil with non stick cooking spray.
  2. In a large saucepan, over medium heat, mix sugar with corn syrup until sugar is melted. Remove from heat and mix in peanut butter.
  3. Then, add crispy rice cereal to the peanut butter mixture 1 cup at a time. Making sure it is mixed completely.
  4. Spread mixture onto prepared baking dish.
  5. Melt chocolate and butterscotch chips over medium heat until smooth and spread mixture over bars.
  6. Refrigerate for at least an hour before serving.

There have been some terrific recipes along the way since the plain rice crispy recipe has come out. This is probably one of tastier ones and it is now a classic. It has been awhile since I have had one, but this is a delicious reminder. Thanks for sharing-your pictures are so tempting.
