AppleScotch Cookies

Every night after dinner, my 5 year old asks "what's for bessert?"  He must have it. It's genetic.  It started with my mother, then me, now, my son. "Bessert" (or dessert, no typo..that's how he really says it) was something we always had growing up and now, I am almost programmed into eating something after dinner. Even in desperation, a handful of chocolate chips.

So, when I find an easy,quick, recipe that everyone will enjoy after dinner..I snag it quick.

These cookies take a huge short-cut in the prep department. A little muffin mix, a little pudding mix and tada..cookies!

Apple.Butterscotch.Oatmeal...a pretty good bessert. :)

{The only issue I have with the recipe, is the amount of cookies it makes is small. Maybe 10-12 max.  If you need a big bunch..make sure and double it!}

AppleScotch Cookies

Ingredients (approx 12 cookies)
  • 7oz package apple cinnamon muffin mix
  • 1 TBSP instant butterscotch pudding mix
  • 1/4 tsp nutmeg
  • 2 TBSP oats
  • 1 TBSP butter,softened
  • 1 egg
  • 1/3 cup butterscotch baking chips
Preheat oven to 375 degrees. Lightly spray baking sheet with non stick cooking spray or line with parchment paper.
Mix muffin mix, pudding mix, nutmeg, and oats. Add in egg and butter. Mix until combined. Fold in butterscotch chips.
Roll into 1 " balls and place on baking sheet.
Bake 10-12 minutes

  4. Wow, these are amazing! I'm not even an oatmeal person but these just looked too good to pass up. These are easily some of the best cookies I've ever made/eaten!
