White Cocoa Oatmeal Lava Cakes

Last week was a little crazy...everyone was OK here, but, my Mom took a bit of a tumble. Slid on the ice in her driveway.  Thankfully, nothing was broken, but, she was banged up quite a bit.  So, I went with my 2 year old and stayed with her for two days.  She is with one of  my other sisters now, but, is one million times better than she was just a few days ago.  Let's all breath a big sigh of relief :)

I realized that my desserts have been lacking of late. Did you notice?  A bit of a sweet-vacation was needed after the holidays. It's over. A bit.  

Ever tried Stevia? Truvia? It's a natural sweetener substitute that has less calories than sugar.  This was exciting news. I decided to give it a try.  

These little cakes have a very cocoa-chocolaty  taste.  The chocolate lava with the oatmeal is a tasty little surprise in the middle and each cake is just 300 calories!

Ingredients (4 cakes)
  • 1/2 cup butter, cut into pieces
  • 3 oz bittersweet chocolate
  • 3 oz white chocolate
  • 3/4 cup oats
  • 1/4 cup flour
  • 1 TBSP cinnamon
  • 1 tsp vanilla
  • 3 egg whites
  • 1/2 cup Truvia/Stevia { or 1 cup regular sugar}
Preheat oven to 425 degrees. Generously butter 4- 4 oz ramekins or custard cups. Melt chocolates and butter together in a double boiler. Add oats, vanilla and cinnamon.
In a separate bowl, whip egg whites and Truvia/sugar until soft peaks form. Mix in flour. Fold in chocolate mixture. Blend well.
Pour batter evenly into cups. Bake 15 minutes. The middle will still be wet.
Slide knife around the edge of the ramekins to remove cake.


  1. Glad your mom is okay! We have had wacky weather here in NC...almost 70 one day to freezing the next. (but NO snow. boo!) This dessert sounds delish and a little lighter. My waistline can not handle any more heavy cream or pounds of butter!
