My first attempt at Chicken Pot Pie wasn’t exactly a success, but, wasn’t exactly a failure either.It was delicious, but, it caved in, leaving it look like something my toddler had attacked.

But, this was much easier and was a much bigger success. No caving anywhere to be found. My daughter said this was the prettiest chicken dish she has ever seen (and she has seen alot of chicken for a 10 year old,we eat a TON of it.)

This also has the Alfredo sauce twist to it, making it not only pretty, but, yummy. It’s filled with chicken, veggies and topped with bread sticks.

It’s a a great one pot dish for dinner.

Chicken pot pie with an Alfredo flavor!

Prep Time 40 minutes
Cook Time 30 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 4 cups cooked chopped chicken
  • 4 cups frozen vegetables, your choice
  • 16 oz Alfredo Sauce
  • 1/2 cup milk
  • 1/4 cup grated Parmesan Cheese
  • 1 – 8 oz tube of refrigerated garlic bread sticks

Instructions

  1. Preheat oven to 400 degrees. Spray casserole dish with non stick cooking spray.
  2. In a saucepan, combine Alfredo sauce, chicken, milk and vegetables. Heat throughout. Pour into prepared dish.
  3. On a separate dish, sprinkle Parmesan cheese. Separate bread sticks Roll bread stick in Parmesan cheese. Arrange on top of chicken mixture. Bake 15 minutes uncovered.
  4. Cover dish loosely with foil and bake an additional 10 minutes or until filling is hot and bubbly.

I made this one last night and WOW! It has quickly been thrust into the 'Please make this one again soon' category at my house. This one even replaces a chicken stew recipe my 19 yr old asks for at least once a month. Having never been a fan of pot pies in general, this one really surprised me with how easy and how YUMMY it is!!

I couldn't find the bread sticks, so I used crescent rolls instead. I cut each one in half length-wise and placed them around the top. The bread sticks may be better, but that worked in a pinch.

Have you tried freezing this? Wanted to make individual ones for busy work nights. May have to use a regular pie crust for the tops in order to freeze...?

I have not tried to freeze it, but, you could possibly freeze the filling and when you are ready to cook, then, add the bread stick topping..Let me know if it works out for you, freezing does make weeknight dinners a bit easier!
