Root Beer Spice Cake

Happy day before Halloween!  Are you ready for tomorrow?  Are your kids?  Mine are. Thank goodness. I was a complete slacker this year.  Halloween costumes were purchased just this past weekend.  It was slim pick-ins to say the least.  Everyone got a costume, but, some were not exactly what they wanted to be. This caused a minor crisis, but, all was good eventually., it's just hoping that the weather cooperates. There's a  50% of rain here.  Lovely.  Fingers crossed this does not happen!

For now, we have cake. Fabulous cake. This cake has a bit of twist to it.  As in twist, I chocolate. This is a big twist for me.  It's also a boxed cake mix, which is becoming a bit of a thing with me. There is so many options with them, endless possibilities.

This cake has a bit of root beer, some spice and just for fun, topped off with candy. Very quick and easy to toss together.

Root Beer Spice Cake

Ingredients (Serves 8-10)
    • 1 package, white cake mix
    • 1 1/4 water
    • 1/4 cup canola oil
    • 3 egg whites
    • 1/4 tsp allspice
    • 1/2 tsp ground cinnamon
    • 2 TBSP root beer
    • 1 cup heavy cream
    • 3 TBSP powdered sugar
    • 1/2 tsp ground cinnamon
    • 1/4 tsp allspice
    • crushed root beer hard candy, optional, for garnish
    Preheat oven to 350 degrees. Spray/grease a 9 x 13 baking dish.
    In a mixing bowl, combine cake mix, water, oil and egg whites.. Beat until combined.
    Scoop out 1 cup of batter and set aside.
    Pour remaining batter into prepared pan.
    Stir ground cinnamon, allspice and root beer into the 1 cup of remaining batter.
    Drop batter for the spoonfuls into batter in baking dish. Swirl into the batter with knife.
    Bake 30 minutes or until knife inserted comes out clean.
    For frosting, beat ingredients until soft peaks form. Spread on cooled cake.
    Garnish individual pieces with root beer before serving, if desired.
