Chocolate Pudding Cake with Fluffy White Frosting

A chocolate  pudding cake topped with the fluffiest white frosting.

Ah..chocolate cake.  Good stuff, isn't it? What could be better? Um..well, how about some perfectly heavenly frosting on top of chocolate cake?  That's what we are servin' up today.

Some delightful chocolate cake which is made from a cake mix.  Yes, a cake mix. I kinda love them. Sorry. Packed with pudding mix, chocolate chips and a little buttermilk to mix it up for you.

Now, the frosting is not vanilla.  It kinda has a marshmallow fluff likeness to it.  It's dreamy and well..fluffy. It's all very easy to bake up and is perhaps like heaven in the pan. The toughest part about this one is restraining yourself from eating the frosting with a spoon right from the bowl!

Ingredients (Serves: 10)
    • 1 box devil's food cake mix
    • 3.5 oz box instant chocolate pudding
    • 3/4 cup buttermilk
    • 2 eggs
    • 1 cup mini chocolate chips
    • 2 egg whites
    • 1/8 tsp salt
    • 1 cup light corn syrup
    • 1/4 cup white sugar
    • 2 tsp vanilla
    Preheat oven to 350 degrees. Grease 9 x 13 baking dish.
    In a mixing bowl, combine dry cake mix, dry pudding mix, buttermilk and eggs. Beat well until well combined.
    Fold in chocolate chips.
    Pour batter into prepared dish and bake for 35 minutes or until knife inserted comes out clean.
    In a small saucepan, add corn syrup and sugar. Cook until sugar dissolves, stirring constantly. Let mixture come to a boil and remove from heat.
    Beat egg whites and salt with mixer (on high) until soft peaks form.
    Once peaks are formed, pour warm corn syrup in a steady stream into the egg whites.
    Continue beating until peaks are stiff.
    Frost immediately on cooled cake.
    Store leftover frosting in covered container in refrigerator.
