Salted Caramel Maple Ice Cream with Candied Bacon Bits

It's not cold for ice cream, is it?  The weather around here has been up and down. bit warm for fall, but, right around 70-75 degrees.  But, then, today, it's about 50 degrees and it feels like it's about 20 below. Brrr.. Having a drastic change in the weather can really mess you up a bit, can't it?

Anyway, I don't think it's ever not ice cream weather around here.  We eat it like crazy all year round. Doesn't matter if it's 95 or 25. Ice cream is always welcomed.

Candied Bacon

Bacon has also never been kicked out the door either. 3 of my 5 kids adore bacon. Love it. My 4 year old actually squealed with delight when I picked up a pack for this recipe.  "Bacon..yay!".  

I was a bit excited about this recipe too.  I've seen candied bacon recipes all over the web since, like forever, but, never gave it a try.  Have you tried it?  Oh man, if you haven't, you have to try it.  Even if you don't want to make this ice cream.  The candied bacon is a must.  It's seriously, pure heaven.  

Salted Caramel Maple Ice Cream with Candied Bacon Bits

The ice cream is nothing to sneeze at either. It's a sweet, creamy, maple-y treat with a caramel swirled into it.  A great taste for the fall.  Topped with this beautiful bacon's a total winner!
{side note:  this ice cream would also be equally fabulous if you just stirred the bacon bits right into the ice cream with the caramel}

Salted Caramel Maple Ice Cream with Candied Bacon Bits

Prep Time: 00:10
Cook Time: Bacon:20 mins
    • 4-6 slices of bacon
    • 1/4 cup of brown sugar
    • 1/2 cup maple syrup, bottled or homemade
    • 1 1/2 cups whipping cream
    • 1/2 cup whole milk
    • 1/4 tsp salt
    • 1/4 tsp cinnamon
    • 2-3 TBSP caramel sauce
    Preheat oven to 400 degrees.
    Line a rimmed baking sheets with foil. Spray with cooking spray. Lay bacon on prepared baking sheets and sprinkle evenly with brown sugar ( approx 2-3 tsp per slice). Bake for 12-15 minutes, turning and coating the bacon with sugar halfway through cooking.
    Remove from oven once bacon is crisp and a dark brown color.
    Let it cool/drain completely. Then, chop into bite size pieces.
    In a freeze safe bowl. whisk ice cream ingredients except caramel sauce. Add into ice cream maker and follow manufacturer's directions. Remove from maker and swirl caramel sauce through ice cream. Eat now if you want soft ice cream or put in freezer an hour or so to firm up.
