Broccoli Salad

Veggie dishes do not get posted here often.  In fact, in my recipe index, there is maybe 5? 6? Not many.
We do eat vegetables in my house, but, things here are super boring.  A pile of corn, carrots, a couple pieces of celery or cauliflower.  We are not adventuresome vegetable people.  That's my fault.  I kinda hate most vegetables.  I know, not a great example for the youngsters.

Well, I do like broccoli.  When it's mixed with cheese and bacon, that's even better.  Of course, that would go for most vegetables, wouldn't it?

With the warm weather (yay!) occurring more and more, this is a great dish to toss together and not worry about cooking anything or turning on the oven.  Nice, crunchy broccoli tossed with a nice, creamy, tangy, dressing.  It's a new favorite here. So, I guess we are getting a little less boring with our veggies :)

It's really delicious and will go great at the next gathering you are headed to too.

If you are looking for some more great add-ins,try chopped onion, cauliflower, carrots, apples, or walnuts.

Broccoli Salad

Prep Time: 10 minutes
Ingredients:  (6-8)
  • 5 cups broccoli, cleaned and cut
  • 6 slices bacon, cooked, then, crumbled
  • 1 1/2 cups shredded cheddar cheese
  • for dressing:
  • 1/4 cup red wine vinegar
  • 2 TBSP sugar
  • 2/3 cup mayo (homemade)
  • 1 tsp black pepper
  • 1 tsp lemon juice
In a large bowl, add broccoli, bacon and cheese. Toss lightly.
In a separate bowl, whisk together dressing ingredients until smooth. Pour over salad and mix together.
Cover and refrigerate for at least 1 hour before serving.
Keep leftovers covered in fridge.
