Maple Cinnamon Quick Bread from Table for Seven

Sweet maple and cinnamon bread drenched in a powdered sugar glaze. Perfect for breakfast or dessert! 

I do so love a good quick bread.

Making homemade bread can be challenge for me. It's the kneading, the yeast, the rising. Well, I guess you could say, the whole process.  They either don't rise, rise too much or just are a big mess.

That is why quick breads are my way to go. 😉

This particular quick bread has all the great flavors of this time of year and is then, completely coated in a fabulous powdered sugar glaze.

So soft and so sweet!
Your ingredients are pretty basic and the bread is simple to mix together.  You don't even need to get out your mixer. Whisking it by hand will work just fine.

For the buttermilk:  If you don't have any on hand, simply mix 1 cup of milk with 2 TBSP of vinegar (or lemon juice)  and let it sit for 5 minutes or so.  It's a great alternative and will save you from buying a whole container.

For the maple syrup: Real maple syrup will make your bread much more flavorful, but, I know, it can be costly, so, using something comparable or a homemade version will work too.

Ingredients (Serves: 6)
  • 2 1/4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup maple syrup, store bought or homemade
  • 1 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup butter, melted
  • 1/4 cup butter, cold, cut into pieces
  • 1 TBSP ground cinnamon
  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla
Preheat oven to 350 degrees. Grease a 9 inch loaf pan.
In a bowl, whisk together flour, baking powder, baking soda, ground cinnamon and salt. Set aside.
In a mixing bowl, whisk together butter, syrup, vanilla, eggs and buttermilk. Whisk until smooth and fully combined.
Add flour mixture into butter/syrup mixture and whisk until fully combined.
In a small bowl, cut 1/4 cup cold butter into 1 TBSP of cinnamon until small pieces are formed.
Fold into batter into prepared pan.
Bake 40-45 minutes or until toothpick inserted comes out clean.
Whisk together powdered sugar, milk and vanilla until smooth.
Pour/drizzle over cooled bread.
For best results, let icing set before serving.
